Chef Bodington's Tips

• Cook fish skin side down first (the skin keeps the fish from drying out). Cook fish undisturbed for 75% of the time on the skin side and then flip it to the flesh side to finish.
• Grinding spices right before using them ensures the most flavor and aroma. All spices contain oils that begin to lose their potency as soon as they're ground.
